Peanut butter oatmeal cookies

I needed some oatmeal b/c of my milk supply, so I made up a recipe for these cookies so that I could have my oatmeal as a treat. They turned out really good, so I wanted to share.


1/2 c. shortening
1 c. peanut butter
2 c. sugar
1 tsp vanilla
1/2 tsp salt

2 eggs

1 c. flour
1 tsp baking soda

1 1/2 c. oatmeal

Preheat oven to 350.

Put shortening, peanut butter, salt and sugar in bowl and cream with electric mixer. Add vanilla and cream a little more.

Add one egg and mix completely. Repeat for second egg.

Add the flour and baking soda and mix completely. You'll be done with the mixer now.

Add the oatmeal and mix by hand. It'll be pretty thick.

Drop by spoonsful onto pan. Bake for 12-15 minutes.

What a great idea! I hate hot oatmeal, but this is a good way to get it in. Thanks, I will definitely have to try these.
