OK... so my DH doesn't like the crunchy cookies (I do, but I make him lunches...), so I had to come up with a softer recipe. So, I've played and baked and the sample batches are
really yummy!
Anyway, I had to share.
Start by turning the oven to 350.
3/4 c shortening
3/4 c peanut butter
3/4 c white sugar
3/4 c brown sugar
cream together and add
2 tsp vanilla
2 eggs
cream that and add
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 c flour
mix, and add
2 cups OLD FASHIONED oats.
drop onto cookie sheet by spoonsful and bake for 9 minutes. Remove from oven and leave on the sheet another 2 minutes before removing to a rack to cool. They'll still be very light in color when you take them out of the oven, but DON'T bake too long, or they won't stay soft and chewy.
They're really yummy and soft.
This recipe yields about 4 dozen.
They're also good with chocolate chips thrown in at the same time as the oatmeal.
