1 1/2 cups flour
1 tsp. salt
1 TBSP sugar
1/2 c vegetable oil
2 TSP skim milk
1 or 2 extra TBSP flour--set aside
for the filling:
5-7 apples cored, peeled, and sliced (I use a couple different kinds together)
1/2 c. orange juice
1/3 c. brown sugar
1/3 c. sugar
1 TBSP butter
2 tsp. cinnamon
1/2 tsp. ginger
2 TBSP flour
for the topping:
1 c. flour
1/4 c. brown sugar
1/4 c. sugar
6 TBSP butter, melted or very soft
Preheat oven to 400. Place apple slices in large bowl and sprinkle them with the orange juice and stir. Leave sit while you make the crust.
Mix the flour, salt, and sugar in bowl. Make a well. Add the oil and milk into the middle and use a fork to mix. Spread out [with fingers] in floured 8 or 9 inch pie pan. Form the crust up the sides and cover the bottom thoroughly. With the flour that is set aside, lightly sprinkle a bit on the crust and rub it on gently--just to smooth it out. Sprinkle the rest on the bottom, over the crust and let sit.
Make your filling by melting the butter on the stove and adding to it, the sugars and cinnamon and ginger. Mix that into the apples and juice. Sprinkle the flour on top and mix it in. Let sit while you make the topping.

Now put the apples in the crust. Top with the topping and press lightly (not too tightly). It doesn't have to be all seamed together--and you can crumble and leave it that way, if you want to, too.
