ok if ANYONE diabetic...ummm dont eat it...itll put you in like cardiac arrest...ive made this about 5 times and god its sooooo good
Chocolate syrup or Fudge topping
8oz cream cheese
1/2 cup sour cream
1 3.9 oz instant chocolate pudding
1 1/2 cups 2% milk
1/4 cup evaporated milk
7 oz of caramels (half a package of the 14oz Traditional Caramels from Kraft are EXCELLENT)
1/2 cup of chopped pecans
ok you can do this 2 ways....
EITHER you can be lazy and by an Oreo pie crust already made(lol)
or you can go out and get some chocolate sandwich cookies(Matt's are THE BEST)
and some melted butter
ok for the Crust, if you are making it then you will have to crush about a package of Oreos (but im TELLING you Matt's chocolate sandwich cookies are SO much better) then after that you will pour melted butter in slowly until the mixture becomes a crumbly texture that can be easily pressed into a 9 inch pie pan(the amount of butter varies)
for the Caramel layer:
melt the caramels with the evaporated milk in a medium saucepan stirring CONSTANTLY over medium low heat
when it comes to a smooth consistency then take it off the heat and stir in the pecans...pour it in the pie crust
for the FILLING:
mix cream cheese, milk, and sour cream with an electric beater on high until smooth(this may take up to five min if the cream cheese is not room temp)
then mix in the instant pudding mix until well blended
pour mixture into pie crust OVER the caramel layer
chill for at least one hour
drizzle chocolate sauce over it and sprinkle crushed pecans
