Fruit Salad with Strawberry Dressing
1 8"x8" pan
1 pint strawberries, sliced
1 pint blueberries
4 peeled peaches or nectarines, sliced
1/2 honeydew melon, cut in chunks
Strawberry Dressing (see recipe below)
COMBINE fruit in pan. COVER and refrigerate. Prepare Strawberry Dressing; cover and refrigerate. SERVE with dressing on the side or drizzle over fruit, stirring to coat.
STRAWBERRY DRESSING
1/3 cup light cream cheese, softened
2 tablespoons sugar
1 carton (8 oz.) lowfat strawberry yogurt
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
STIR cream cheese and sugar in a medium bowl until smooth. ADD yogurt, lemon peel and juice; mix until smooth.
Number of Servings: 9-10
