Microwave Divinity
3 cups sugar
1/2 cup light corn syrup
2/3 cup water
1/4 teaspoon salt
2 egg whites
1/4 teaspoon vanilla extract
1 cup of chopped pecans
In an 8 cup measure, combine sugar, corn syrup and water. Microwave on High for 16 to 19 minutes until mixture reaches hard boil state (260 degrees). NEVER stir hot syrup. Add salt to egg whites in a large mixing bowl and beat on high speed until stiff peaks form. Pour syrup in a thin stream into egg whites, beating constantly until mixture loses it gloss and thickens, about 4 or 5 minutes. Stir in vanilla and nuts. Drop at once by spoonfuls onto foil.
