We LOVE chicken tacos in the crockpot anytime. But during winter I especially love crockpot meals because I am stuck inside and it makes the house smell good
I put 1 1/2 - 2 lbs of boneless skinless chicken breasts in the crockpot. Then I mix 6 tablespoons fresh squeezed lime juice (or you can buy those little things of lime juice to use) and mix it with 2 tablespoons chili powder. I pour that over the chicken breasts. Then cook on low 5-6 hours. I use thin chicken breasts from frozen and its usually about 5 hours.
After that shred chicken with two forks and add a cup or two of frozen corn and a cup or two of chunky salsa and let cook 30 more minutes.
When its done serve it on tortilla shells with lettuce, sour cream, or whatever you like on your tacos.
We just started getting corn tortillas. We put a slice of american cheese between two corn tortillas and warm it. Then use it as you would one shell. It is delicious!!!
