Ladies fall is right around the corner. The temps will drop, leaves will turn colors and our favorite holidays are not too far behind. What are some of your favorite meals to eat in the fall? Care to share a recipe?

I'm so in love with fried turkey. And homemade dressing.

It's getting cold enough for meatloaf and pot roast. And roasted chicken.

Never had fried turkey before. I love meatloaf and roasted chicken. I need to get a whole chicken to roast one of these days. I haven't done one in so long, I miss it.

It's so easy and it's SO moist and tasty. Seriously it's the best way to eat turkey.

Fall brings back coffee for me! Decaf of course, but still coffee!!!!

As for food, I'm not sure. DH is leaving for work next weekend sometime, which means I can eat all my favorites with out grossing him out. I figure it will be a lot of rice salad (white and wild rice with sweet corn) and salmon being cooked around here.

Pumpkins. Pumpkin everything.

Pumpkin spiced lattes. Pumpkin seeds. Pumpkin pie (or cheesecake, which I made for the first time last year and it was fantastic). Pumpkin muffins.

Dh makes really yummy apple cider that I'm looking forward to, too. Chili is a fall/winter staple around here too but usually we wait until late October or November for that.

We're big on chilli here too. I already started cooking it since our temps have been in the mid 60s-70s.

Psshh... I eat this stuff year round but I will share it because it's that good!

Peas and Proscuitto

Ingredients
12 ounces cheese tortellini
1/4 cup reserved pasta cooking liquid
2 tablespoons butter
2 cloves garlic, minced
1/4 pound proscuitto, sliced into thin strips
1 cup heavy cream
1/4 cup Parmesan
3/4 cup peas
Salt and pepper

Directions
Cook tortellini according to package directions. Melt butter in skillet and cook garlic for 1 minute. Add Prosciutto and cook for 2 minutes. Add heavy cream and bring to a simmer. Cook until cream is reduced by half. Stir in 1/4 cup Parmesan and peas. Stir in reserved cooking liquid and tortellini and toss to coat.

We do a lot of soups. I make up big pots of it on the weekends and we can pull it out for lunch or dinner.

Soups! I love making soups, but no one wants to eat them in the summer months. I want a big ol pot of chili, right now!

We LOVE chicken tacos in the crockpot anytime. But during winter I especially love crockpot meals because I am stuck inside and it makes the house smell good

I put 1 1/2 - 2 lbs of boneless skinless chicken breasts in the crockpot. Then I mix 6 tablespoons fresh squeezed lime juice (or you can buy those little things of lime juice to use) and mix it with 2 tablespoons chili powder. I pour that over the chicken breasts. Then cook on low 5-6 hours. I use thin chicken breasts from frozen and its usually about 5 hours.

After that shred chicken with two forks and add a cup or two of frozen corn and a cup or two of chunky salsa and let cook 30 more minutes.

When its done serve it on tortilla shells with lettuce, sour cream, or whatever you like on your tacos.

We just started getting corn tortillas. We put a slice of american cheese between two corn tortillas and warm it. Then use it as you would one shell. It is delicious!!!

its the only way to eat turkey. seriously. I hate turkey. Fried is the ONLY way ill eat it.

I love turkey my dp loves it fried. I'm not big on it fried. Its still hot here upper 80s, that's Florida for you though. Wont get cold here till November or December sometimes January. I love thanks giving but we don't have traditional things we cook during certain time of the year.
