I'm running out of interesting recipes, and my family is sick of the same old thing! Share some of your favorite quick and easy recipes with me! I'll be back later to post one or two of mine. (These can be main course, side dish or dessert!)
Because I often do not have time to spend making a dessert, I love my "dump cake" as a fall back. It's so easy to do, and the prep work takes no time.
Take a 13X9 cake pan and empty two cans of apple pie filling into the bottom of it. Sprinkle a spice cake mix over top of the apples. Cut up a stick and a half of butter and sprinkle the butter all over the top of the cake mix. (I slice the stick and then cut each slice into 4 pieces, but whatever works for you!) Bake this uncovered at 325 degrees for about an hour.
We serve it with a scoop of ice cream (though it's great by itself too)! It quickly became a family favorite.
My new favorite is colorful quinoa salad (stole from work)
I cook quinoa as directed using chicken stock instead of water. I cool this and add diced red onion, diced tomatoes (canned, undrained, the juice will keep the salad moist), diced zucchini, sliced kalamata olives, and feta. Drizzle with a little olive oil. Add slivered basil and parsley and toss. Super tasty and healthy, plus you can add pretty much anything.
