The most consistent thing we do every year is let the kids open one small gift just before bedtime and write Santa thank you notes. We set out veggies for Santa and the reindeer. (Santa wrote us a letter one year saying he needed to drop a few pounds and would appreciate a healthy snack -- dh and dd are diabetic.)

We normally have a buffet of fun appetizers and hang out together by the tree with only our Christmas lights on talking about all of our blessings. Then they each open a night before present. (they normally get new pjs too lol) I read them a Rudolph story and The Night Before Christmas book, put out cookies for Santa, carrots for Santa's reindeer and then we say family prayers and off to bed they all go.
