Ok Ladies,

I have hit a point of boredom with what I make for dinner and my family is beyond it! What are some of your ultimate family favorites that are easy OR what is your menu for a week look like? One last thing (if it applies to you) - if you homeschool - what is your lunch menu along with your dinner menu?

BTW - I really need to increase a said little one's vegie intake so those "hidden" ingredients would be great!

One last thing - I have a diabetic father that lives with us

anything with ground beef is easy and goes over well here

tonight we're having a huge green salad, some roasted vegs, and some kind of soup I'm gonna make

I love this taco soup......


Taco Soup

* 2 pounds shredded cooked chicken
* 1 onion, chopped
* 1.5 cups of white minute rice
* 1 can Rotel tomatoes drained
* 1 package Hidden Valley Buttermilk Dressing Mix
* 1 package of Taco Seasoning (any brand)
* 1 can red kidney beans drained
* 1 can Pinto Beans, drained
* 1 can corn drained
* enough chicken stock to make it soup. I usually use between 4-6 cups.

Add all ingredients, except rice, in a big pot and simmer. The longer it is simmered, the better it becomes. about 30 mins before serving add rice and up heat to a low boil. I serve it with cheese quesadillas and top it with cheese and avocado.

Serves 8 - 10

I was thinking some Dandelion wine and greens Just kidding, tonight we are having:
Baked chicken, homemade mashed potatoes, frozen corn and jello for desert. Everything that we are having was raised/grown on our farm (well, except the jello). I love those nights.

The taco soup sounds good. I'll copy that recipe. Thanks!

It is good, my family doesn't like onion all that well so I cut back on that and don't quite put a whole packet of ranch seasoning in. It can get a bit spicy depending on how hot the rotel is and how hot your taco seasoning is.

I changed the recipe a bit I realized I wasn't as through as I needed to be, and I forgot an ingredient. sorry
