My kids are little and seem to like the same kinds of snacks year round:
Graham crackers and goldfish are a favorite, but I parcel those out because they get expensive.
Hummus and bread
Toast with honey
Apple slices with honey or peanut butter
Fresh or dried fruit
And occasionally ice cream or popsicles
I find that having plenty of cold water available that they can get themselves is the key to managing the heat for my kids.
Fruit.....all the time : We also eat out of our gardens a lot, salads, green beans, peas, cucumbers, and now the melons are starting. Just pair some fruit, garden veggies, and crackers and it's good enough for lunch!
Plus we make a lot of cookies around here. Right now, it's monster cookies because I'm nursing so it's a good excuse!
