I thought a few of you might have some ideas for this. Today I made homemade pop tarts. I thought I might save some money making some convenience foods. However, the dough uses so much butter, that I spent more money on the ingredients than if I'd just bought a box of pop tarts or toaster strudels or whatever.

I may nix this particular recipe altogether anyway because I just checked them and it looks like most of the jam leaked out all over the place anyway.

The butter alone for this recipe cost me $1.50.

I dont have any advice to offer but I just wanted to say that I totally understand the cost got in your way as we all are looking to keep our cooking/food budget as low as we can, but I love that you are finding ways to not feed your family those processed box foods! I also try very hard to stay away from those foods but the convience is wonderful.

I hope someone has some advice for you because Id love to know as well.

There are some things that are just not cost effective to make from scratch. Maybe a fun treat every once and a blue moon, but not something I do often.

Instead of pop tarts, what about muffins? I think that would go further and may even be healthier depending on your recipe. They freeze well too.

Kierasmom, I think that may be what I end up doing. A friend posted on fb about some bran muffins that her husband likes and swears keep him full all morning. I asked her for the recipe; can't wait to try them out. I made a triple batch of pumpkin oatmeal cookies on Saturday and froze balls of dough. I made them with less sugar to make them a bit healthier and more like a breakfast item. It's so easy to pop them in the oven for 20 minutes and there's no mess!

1 box cake mix, 1 can pumpkin, 1 cup chocolate chips put into muffin tins = pretty darn cheap muffins. You can even get the pumpkin on wic, so that makes it free

You don't HAVE to do the chocolate chips, could use a chocolate cake mix, or the spiced cake, or add pumpkin spice, or whatever you want... nutssss... dried fruit?

Repti, that's one of my favorite go to recipes. I like to add a struessel (sp?) topping. My kids eat them as they come out of the oven.

That is a really quick and easy way to make muffins ...never would have thought of it..I will try it also.

but what flavor of cake mix do you use when adding the pumpkin?

UM I bet if you used a flavored cake mix they wouldn't even notice it's pumpkin. You don't have to use pumpkin flavoring. I hate that stuff. Yuck.

I like it with the basic yellow cake mix cause we are going for that pumpkin pie flavoring. I've done it with chocolate and it's still yummy.
