I made a batch for the first time today... whoa nelly, this is some good eatin!! I was so easy to make and it has such a nice "meaty" texture, and has more protein than most meats! I cooked it up as a stir-fry and the kids devoured it! My son said "This is good chicken, Mom." So I told him its actually not chicken and he was shocked. My very picky toddler kept grabbing at it, yelling "MINE!!" My next endevour is to simmer it with carrots and potatoes, as a mock pot roast.

check out vegan dad's blog, he has some good seitan recipes! i love seitan, especially grilled with BBQ sauce, yum!

Its hard to believe but I've never had it! Its one of those things I've always wanted to try but just have never rounded up the ingredants for it.

there is a local company, Rays Seitan, which makes the most incredible seitan i have ever ever had. YUM.

Oooh. I wish I could find some preprepared to try first. Honestly there are a lot of ingredents in there that I have no idea where to try to find.
