Oh i am not a beet lover!! Yuck! But, my mom and my sister like them, they chop them, toss them in Olive Oil and some kosher salt (maybe pepper?) and roast them at 450 for 30 minutes. They seem to think they are good that way.
I love roasted beets with pea pods and goat cheese. I don't thinkyou'd do the goat cheese, but with the pea pods and a little vinegar on them they are great. A bit of dill, orange and fennel with them would also make a great salad.
