I got a bag of beets at the produce place today, any great recipe suggestions? I think I may make this with some of them: Roasted Beet-Tofu Burgers | recipe from FatFree Vegan Kitchen

Oh i am not a beet lover!! Yuck! But, my mom and my sister like them, they chop them, toss them in Olive Oil and some kosher salt (maybe pepper?) and roast them at 450 for 30 minutes. They seem to think they are good that way.

yeah, roasting is always good I also made beet chips once, sliced them super thin and then coat in oil and season and bake at a low temp until crispy.

I love roasted beets with pea pods and goat cheese. I don't thinkyou'd do the goat cheese, but with the pea pods and a little vinegar on them they are great. A bit of dill, orange and fennel with them would also make a great salad.
