I'm not a vegetarian by any means, but my son is turning into one I think. He just doesn't like the taste of most meat. He will eat some, but most of the time he just refuses. He eats any vegetable under the sun except for spinach. We go to a buffet, he gets mac&cheese, and fills his plate up with three different types of beans, corn, etc. Now, I'm perfectly fine with that because I know vegetarians can live really healthy lives and it is a very respectable lifestyle. Eating meat is NOT a requirement!

I'm posting here because I'm curious as to what dishes YOUR children like so I can prepare some for him. I know I can look online but I think it would be better coming from other mommas who put it into practice and know how much their children like it. I would like to have some confidence going into making these dishes for him, rather than wasting food because he doesn't like it.

I made tofu fingers for DD the other night. I sliced the tofu (extra firm) and pressed the water out then covered it thinly in mustard and veganaise (vegan mayo) and then dredged it in panko bread crumbs and seasoning and baked it.

Hummus is a good one, falafel is another good one. We eat a lot of tofu, bean burgers, bean balls, etc. Yogurt and cheese is another good way to get protein. Eggs and omelettes are favorites of DD, including egg salad.

I also make broccoli nuggets. I take one bag of organic broccoli and defrost it, then puree it in the food processor and stir in bread crumbs (1 cup), cheese shredded (1 cup) and seasonings. Then i make little nuggets out of it and bake and turn half way thru. YUM!

When you say back at what temp and how long do you bake for? DS would LOVE the broccoli nuggets and I would love to try the tofu fingers.

i generally bake everything at 350F-365F.

I've done the broccoli nuggets w/ chicken, but since we're no longer eating meat I will have to switch back to breading tofu in the broccoli. Sooo yummy!
