I always choose quinoa over couscous because quinoa is superiorly nutritious and has a good amount of iron for a grain. couscous is just tiny pasta balls. I do like couscous (whole wheat preferably) in a pinch for a VERY quick side.

The quinoa, i just coo 2:1 water:quinoa ratio. Do you want recipe suggestions for it? As far as couscous we usually buy the boxed kind with the seasoning packet, or the plain kind and i just put some parm cheese sprinkles on it.

I also make a quinoa salad. I take 2 cups of quinoa, cooled, in a big bowl, add diced cuke, carrot, red bell pepper, and any other good veggies, a can of chickpeas drained and some balsamic and salt to taste, YUM!

There is a recipe in one of Tosca Reno's books that is shallots, quinoa cooked in veg broth and sun dried tomatoes, so simple and i add chickpeas to make it a meal.

Another good recipe from one of Dreena Burton's books is a hummus quinoa casserole thing. In a casserole dish, pat down 2 cups of quinoa, on top of that carefully spread out 2 cups of hummus, then top with a hefty amount of roasted vegetables (tossed prior to cooking in balsamic) and then baked. YUM!! I may make this this week. Her recipe called for like fennel, carrots, etc. But i hate fennel and I use whatever is on hand, generally carrots, parsnips, sweet potatoes, broccoli, etc.

I am going to make the quinoa and hummus casserole tonight, so I will try to remember to take a picture I know I have a picture of the sweet potato and tofu over cajun quinoa somewhere.

That looks amazing.
I have to admit I bought some once for a recipe (a baby food recipe a year ago) and its been sitting in my pantry.
I had no idea what else to do with it! LOL
I'm totally going to make that casserole! YUMMY

That looks awesome!

I make a casserole with quinoa, roasted mashed sweet potatoes and crushed pecans on top. I usually add a dab of cranberry sauce.

GREAT really easy recipe for quinoa is greek salad with quinoa.

Also, substituting vegetable broth for water gives it a great flavour boost.

As for greek salad, I do cherry tomatos, cucumber, onion, quinoa and crumble some feta.
And for the dressing; olive oil, balsamic vinegar, garlic, lemon, dill and salt and pepper.
It's really awesome to make a huge batch of it on Sunday, and to have throughout the week because the longer it sits, the better it tastes.

Delicious and nutritious!

I love that quinoa cassrole recipie from Vive le vegan. One of my favs.

I also like to stuff bell peppers with quinoa. DD alwyas asks me to make it.
