What do you and your LO's eat for breakfast? We get the same collection of foods, most days it is old fashioned oatmeal. Some days eggs and other days cottage cheese oatmeal pancakes. Not much variety. I do not always have a lot of time before work to make elaborate breakfasts.
Cottage Cheese Oatmeal Pancakes:
1. cup old fashioned oatmeal ground to flour in blender. Add 1 cup cottage cheese and 4 egg whites and blend until smooth. Optionally add some vanilla extract. Cook on skillet like a pancake. Can eat plain or serve with a little all natural fruit preserve.
I mix about 1/4 to 3/8 c raw rolled oatmeal with 2 eggs (or 1 egg and 2 yolks) and cook that like a pancake. I love it. I always add in a bunch of other stuff like milled flax seed, unsweetened coconut, dates, sunflower seeds, black sesame seeds, & chopped walnuts. The kids love it too.
We do eggs and oatmeal separate on other days. Sometimes I make them whole wheat pancakes and usually have those and some muffins in the freezer than I can just defrost for them if we're in a hurry.
