I realized i did not answer the question, LOL. I usually eat it as a side dish with veggie burgers or something. quinoa is so much more nutritious, that i usually make that, but DD loves couscous (maybe she likes saying it more than the actual food, LOL) and it cooks in like 5 minutes.
you can mix it with sauteed veggies then toss with lemon juice and add feta (omit if vegan) and stuff into bell peppers. i then use about an inch of tomato or vegetable juice to steam them in on a pot on the stove. you can use orzo in place of the couscous too.
