I made this recipe Cheesy Black Bean and Pepper Enchiladas | Family Kitchen with homemade enchilada sauce. My first time making enchiladas (i think? I do not remember ever making them before) and it was a big success. I may leave out the onion next time, it was a wee bit too much.

Delish! I love enchiladas. I have my own recipe that is killer, if I do say so myself I am dying to try them with Daiya cheese now that we're vegan.

IVF #1 (september 2012): 11 eggs, none fertilized, no transfer
IVF ICSI #1 (may 2013), 1 blastocyst: (m/c 7 weeks )
FET #1 (october 2013), 1 blastocyst:

IVF ICSI #2 (april 2014): 5 eggs, 4 fertilized, 2 bad quality embryos, no transfer
IVF ICSI #2.1 (coming soon)

I used Emeril's that i found online, i used veg stock. Easy Enchilada Sauce Recipe : Emeril Lagasse : Food Network

We ate that last night and LOVED it!! DH loved it too (which is rare...). Will definitely be making it again, though I won't be using as much chili powder and add more cheese

I made it again tonight and it was yummier. I omitted the onions, but added some corn and smeared each tortilla with refired beans. The enchilada sauce from last week worked for this recipe and the last batch, awesome.

Yum! I love black bean enchiladas. They are absolutely amazing with roasted sweet potato added in. Black beans and sweet potatoes make awesome mexican food!

I made the enchiladas AGAIN, with more variations. Yum. Best ones yet, next week maybe sweet potatoes! they are good since Tues and Thurs i work late, so it is good to have something already made.
