I use beans, lots of beans. Generally 1 onion diced, sauteed, 1 green pepper sauteed, then add in some cans of tomatoes (crushed usually or one crushed and one diced, the large cans), black beans and red beans, some seasonings (you could always use a chili packet of seasonings), carrots.
I also make chili with a bunch of beans and lots of veggies. I think the key to a great veggie chili is adding just a little bit of balsamic vinegar to the pot right before you serve it. It's so good that way.
