I already posted more than once about my love with beet tofu burgers, but this morning I made DD and me beet pancakes! Yum! I'm always looking for ways to use the beets from our garden. I shred raw beets into waffles all the time. I'll have to give the pancakes a try.

yes! try them. i brought some for my friend and her sons at the zoo today and they gobbled them up too. I will report back when i make the hummus.

Yes, report back on how the hummus is. I'm not sure if my kids would like that, but I think it sounds good. They're funny with beans. They won't touch regular chick peas, but gobble them up roasted, so I never know what they will or won't eat.

I made the beet hummus tonight. It was different, but really good.

I served it on the side with this. The quinoa was amazing! I reduced the balsamic with the orange juice instead of adding the juice to the quinoa. I added a couple crushed sage leaves to the balsamic for a minute or two to give it a little extra flavor and then pulled the leaves out. I also just scooped canned pureed pumpkin into the quinoa once it was cooked since I didn't have other pumpin in the house to roast. It was so good. DH and I both thought it tasted a lot like Orange Chicken.

On a sweet note, I made beet red velvet cupcakes for July 4th...they were good but didn't really taste like bakery red velvet, though Danika has requested them for her birthday

i made a chocolate beet cake and it was just ok, if it had frosting it probably would have been better. it had a very earthy taste to it. it was not horrible, but not awesome and not nearly as awesome as black bean brownies

I made the hummus and thought it was awesome the first day. It tasted like Miracle Whip the second day and I threw it out too. I won't be making that again.

I made the pancakes and they were awesome!

We made the beet pancakes (we called them purple pancakes) and they were actually ok. My kids liked them better than I but that is really what counts anyway!
