I was on a running forum and in their food section there was a recipe for orange muffins that they were raving about. Something I would never eat or consider to bake, but on a whim I did and they were not too bad. DD ate a whole mini one in one bite, so she liked them. I did not put the whole orange in the blender, i zested it and then opened it up and took off the white rind part. It was kinda refreshing to try something new (i also used apple sauce instead of butter)

Those look great! That's the kind of recipe I'd change as well. I'd use apple sauce and then whole wheat flour and probably some flax seed and wheat bran. I'd either do no sugar or use a little honey instead. It'd totally change the taste, but I bet they would be good with a little molasses in them too. I love to bake and have an issue with always changing the recipe
