i've made two recipes from the peas and thank you book this week. the thai burgers and the red lentil enchiladas i did last night. those were pretty good..but i did add zucchini and bell pepper to the filling for more veggies. they were good tho! not sure what's on the menu for tonight. might be a lazy pasta night!
Tonight we had burrito bowls- zucchini brown rice, black beans, sauteed green and red peppers, onion and zucchini with avocado, lettuce and tomatoes. This week we're also having Socca pizza with Daiya cheese, grilled veggie paninis, black bean burgers and Daiya mac and cheese....all with various veggie sides and lots of raspberries and peaches!
Like a taco salad I guess, tortillas chips layered with bean/boca crumble mix then topped with shredded cheese, lettuce, tomatoes, olives, salsa or any variation of that.
