Eggplant! I love eggplant. I rarely buy it because it is pricey, but if i ever get to the produce place, i buy some, generally the japanese variety which, imo, tastes better and has minimal seeds. I made some tonight by just marinading it in some shoyu, miso, and garlic powder and baking it at 400F in the oven, YUM!!!
how do you like yours? I have a couple other recipes i like with eggplant:
