Anyone else like this bizarre squash? I love it and am making another spaghetti squash casserole tonight. Easy Baked Spaghetti Squash | Family Kitchen was the one i made last week. i am just going to wing it tonight, especially since i have a package of spinach i need to use.
Spaghetti squash is super easy. You halve it, scoop out the seeds, place cut side down on a baking sheet and cook at 400F for about 40 minutes. Once cool enough, you use a fork and scoop the "spaghetti" like strands of the squash out. I have made it like spaghetti too, but sheesh, i really like real spaghetti
yes, i think it needed some more seasonings and i used a whole can of tomatoes and it could have probably used some more, but it was good. I also topped it with feta upon serving Some sundried tomatoes would even be really yummy with it.
