I love pumpkin. So much so i bought a case of organic canned pumpkin earlier in year. I have so many recipes i love. I found a new incredible recipe, and vegan, you have to make it! i made it for a halloween party Monday and everyone RAVED about it.

i just made these! gotta put them in the fridge now to set. will taste them after dinner, if they taste as good as the unbaked product, they should be delicious i guess i shouldn't have added the chocolate chips yet, but i got carried away.

beautiful!!! so easy too, right? i put mini chips on mine and they half melted. The first time i made it, it was too close to bed time and then the next day i totally forgot i made it! LOL

i think it tasted better this morning after being in the fridge all night..yes, i had a piece for breakfast. bad, bad

i would totally make this again. i was happy the brownie part came out because here at high altitude i always have to make adjustments to baking recipes. things need more moisture up here, less leavening agents, etc.., so i would probably add a tad bit more oil to the brownie part or even more pumpkin to the mix. but they were very close to perfect.
thanks again for sharing the recipe. i'm going to make these when my father in law is here, he's going to love them.

fat free vegan posted a (not fat free) double layer pumpkin cheesecake i may make this weekend!! my sil is gluten free so if i can make a gluten free crust.....
