Hello-

I'm not vegetarian but I run an FCC home daycare for the Army and I am going to sub for two weeks for a family that is vegetarian. I need 6-10 fairly easy and kid friendly vegetarian recipes and I was hoping y'all could help me. I don't want to just make a meal for that specific child because I don't want her to feel left out so I want something that children who are not accustomed to vegetarian meals will like as well.

So far my ideas are:

Tomato soup and mozzarella grilled cheese sandwiches (she can have dairy products)

Mushroom turnovers

Bean and cheese burritos

Macaroni and cheese with peas or broccoli

That's all I have so any ideas are more than welcome. Thanks so much in advance!

i would go to weelicious.com they have the best kiddie recipes!

my daughter's school is all vegetarian (2-5yo) and they serve a lot of pasta casseroles with veggies, rice casseroles, bean soups, yogurt with fruit and granola.

other things we do: hummus and crackers or veggies to dip
tofu sticks*
bean quesadillas
bean and rice
bean burgers
veggie burgers


* tofu sticks:
slice 1 block of extra firm tofu into sticks (i get about 16 per block)
coat each stick with a mixture of veganaise and dijon, then dip in a breadcrumb mixture ( i use panko with nutritional yeast, garlic powder, salt) and then bake on a greased sheet pan.

Veggie quesadillas is an easy way to stick a ton of different veggies (mashed a little) into a meal. I usually buy some frozen veggies different varieties and then pour some of each bag into a pot and lightly steam (so they can be semi mashed up for easy eating). Put into the tortilla and then we add some cheese and avocado and top with a bit of salsa at the end. Yum!
