I have one more question, I hope that is okay. I have not been in contact with the family of the girl I am subbing for yet, only with her other provider. She said the girl is not allowed to eat any of the following:

Meat
Seafood
GELATIN
Fish Sauce
Chicken Broth
Animal by-products
chicken fat
Beef fat
Marshmallows

Does animal by-products include eggs, milk, cheese, etc.? I thought all dairy was considered animal by-products but the other provider told me the girl is allowed cheese and yogurt as long as the yogurt does not contain *kosher gelatin*.

I was always under the assumption (and all it's only an assumption because I will admit I am not very educated about the vegetarian/vegan lifestyle) was that if you do not eat eggs or dairy you are considered vegan. Is that true? So should I actually be looking for vegan recipes?

Animal by-products include eggs and dairy, and that would be considered vegan, yes. That list seems a little confusing. I'd double check before serving any dairy.

i would think they would have put that in the list if she did not eat dairy or eggs, but good to double check. Gelatin is in a lot of things, jello, lots of candies, etc.

Okay thanks ladies, at least I know I wasn't totally going insane. I think I will email the provider this weekend and get mom's email just to double check all the information.

KUP and let us know what recipes you use that work. if she does eggs, then omelets, frittatas, quiches, etc are really easy for a group.

I just wanted to stop by and update, the dad came by a few days ago to introduce me to the little girl and get her acquainted with our house. I asked him about her diet and he said she CAN have dairy and eggs so that makes my menu planning A LOT easier.
