i made one last night and forgot how much i love them. i think they are so pretty!

that looks so good and i just bought some shredded coconut yesterday! i really want to try it, but looking at the amount of leavening agents, i will really need to think it through to recalculate for high altitude. (i live at 7000ft)

i made this on xmas eve. it was really good and moist. i did make some altitude adjustments tho. i think next time i would add more coconut to the cake...
i made a glaze that ina garten (my cooking idol) made for a coffee cake once...it was 1/2 cup confectioner's sugar and 2tbs maple syrup, with a little water for thinning, then dusted the cake with coconut. it was delicious. i froze half of the cake for later to see how well it freezes and thaws. i took pics, but i have a really old camera that makes getting my pics inconvenient and time consuming

i thawed out the other half of the cake last night and it thawed beautifully. i should have expected nothing less from a bundt cake tho
