Do you make any casseroles? I love casseroles because it is food for many days. I am pretty stuck with ideas lately. I like to do enchiladas, but i also like to do a mexican rice and bean casserole i found on pinterest, i think it is a WW recipe which i veganized.

i like casseroles too because they do go a long way, but i probably dont make them very often. i have found tho that since i had carlos i make them more since i have less time for things.

i love making vegetarian chili and putting it in a baking dish and topping it off with jalapeno cheddar corn bread batter...vegan can omit the cheese of course.
not sure if that counts as a casserole...i like to make them in individual dishes.

I use Daiya cheese on everything. It tastes just like the real thing!
