if so, what milk did you use?
i have a friend who's vegan and loves rice pudding. looking for an alternative.

i could really go for some rice pudding right now! it's been snowing tons and it's all cold outside and that would really hit the spot right now.


what i'm really dying for is atol..a hot drink we drink from central america that i used to have as a kid.

I don't know if it qualifies as "pudding", but I'll bake a sweet potato in the oven and throw it in the food processor with some short grain brown rice and a little vanilla. Makes a yummy breakfast or comfort-food snack.

that sounds like it's worth a try. sounds good!

i found this online and made it this morning...

came out pretty good except i would definitely switch to arborio rice next time.
the jasmine doesn't burst well enough for rice pudding texture. but it's a fast-i'm-craving-rice-pudding-recipe.

i did not add almonds. i added raisins while the milk was cooking the rice and i add cinnamon sticks to the milk as well as it cooks.

I've never had rice pudding before either. But the sweet potato idea is awesome. I will try that.
