What are you cooking this week? I mad a dal kofta last week that was to die for and i will remake it! Veggie num num : Dal Kofta this tasted like it came from the Indian restaurant! I am totally unsure what else i will make this week. I may do the polenta lasagna again. Polenta Lasagna with Portabellas and Kale | recipe from FatFree Vegan Kitchen

That polenta lasagna looks awesome! I make a version because my little bro is gluten and dairy free. I always just blend silken tofu with a little salt, garlic and parsley for the cheese. This looks so much better.

I haven't decided what I'm making when, but on my list for this week:
Barley and Fennel Risotto
Squash, Chickpea & Red Lentil Stew
Sweet Potato Quinoa Burgers

i made the polenta from scratch, so i had big sheets of it, it was great.

i envy your meal planning skills...i always mean to plan better, but never get around to it. this week so far has been some old peasant french bean dish and monday we did some veggie burritos. not sure what's for dinner tonight, but it may involve kale and pasta.

i work late a couple nights a week, so i use Sun and Mon (days off) to cook a lot for the week
