oops! a little late I made some beans and rice Monday, polenta lasagna, again, on Sunday. not sure what i will make today, or maybe just eat the beans and rice.

slow cooker bean dish on sunday night, ate leftovers monday...then last night i made a caper/olive/asparagus sauce for some perciatelli pasta. not sure what's going on later this week, but i have some beets and parsnips i need to use.

Last night I made a "lasagna" using Isa Chandra's cashew ricotta and sweet potatoes instead of noodles. Half of my family loved it and the other half, not so much, haha!

I had planned on making a soup this week but we got a heat wave and now I don't feel like cooking. We're having chickpea salad sandwiches tonight.

i'm making this right now and it tastes SO GOOD so far! and the house smells amazing. i'm going to make some rice with it...cant wait to eat it!!! i think this may definitely be worth repeating.
