How do you manage a holiday like Easter vegetarian? We do not celebrate, so it is not an issue, we have no local family. In the past, i just ate side dishes and dessert When i was single and living in Boston, i would have all my friends who did not have family over for a big Easter dinner and there was usually a big lasagna or pasta dish as the center of the meal, it was always a vegetarian meal with a bunny cake for dessert

We are doing veg lasagna. mil however is bringing over meat. Eww

i typically just eat the side dishes...i'll do that again tomorrow since my mom is making a roast or something. i know my grandmother is making me a cauliflower souffle tho! yum!
