What's cooking this week? i made Happy Herbivore's tofu scramble for breakfast and probably FFV's beet tofu burgers tonight or Wed and her polenta lasagna too.

quorn tacos on corn tortillas with a spicy mango salsa.. i made some pea and green bean risotto for carlos yesterday....i'm not really sure what's on tap for tonight but it might involve asparagus. maybe orzo stuffed bell peppers this week. i didn't plan very well...i hate that once 5pm rolls around.

you know what, it was really good, but both DH and I thought it could do WITHOUT the artichoke hearts! LOL. I did add some veggie italian sausage too.

oh i am bad, i never soak my quinoa!!! i had my leftovers, well, some of them, and it was even tastier. it makes a huge amount of food.

it's not totally necessary, but better for you nutritionally i believe. sometimes if i'm in a hurry, i just rinse it.

so while gathering my ingredients...no kidney beans! used canellini beans instead. it's cooking as i type this. i'll let you know how it tastes! smells really good!

well, it was pretty delicious! i think i did a tad bit more than a "pinch" of cayenne cuz it had a bite to it, but i liked it. my husband liked it too.
i think the white beans sort of got lost in the flavor tho. i'll definitely do kidney beans next time.

We had this last night. It's so good! We had that with gluten free spinach muffins. I made those with brown rice flour and applesauce. No yogurt since we had family over and some of them can't do gluten or dairy.

i made this for DD tonight, vegan version, and she ate like 8 of them. i did it simply and just did sauce, cheeze, and some veggie pepperoni in a few of them.
