I made polenta lasagna again last night from fat free vegan and will probably make happy herbivore's tofu scramble for breakfast today. i have just been busy looking at recipes for DD's bday party in a few weeks that i have not thought about dinner foods. been eating hummus wraps for lunch.
what are you thinking of doing for her birthday? (her bday is same as my husband's )
we had some fajita burritos on flax/blue corn tortillas the other night and last night we had mashed sweet potatoes, baby greens/baby kale salad, and some sauteed veggies with quorn cutlets. i bought some beautiful artichokes last week and they were delicious, i had to get more this week. they're like a meal in themselves. will probably do those tonight.
i tested a vegan white cake recipe with frosting today and it was ok, everyone who tried it thought it was awesome, i thought it needed work. will try another recipe and decide. I am going to serve probably-- brown rice salad, pasta salad, quinoa salad, finger foods of some sort, veggies and dip, cupcake decorating buffet. Not sure really, still working out all the details
