I am going to start doing a food of the week thread again with different ways to use each food This week is lentils.

I love love love lentils. I make a snobby joe recipe from theppk.com that is awesome, curries, kofta and lentil loaves. YUM! DD loves lentil soup and they eat it almost once a week at her school.

yum! today is a good soup day, cool and rainy, however, i have tons of party food left over to take care of.

I would love to learn ways to cook lentils for my 9mth old! He has allergies to milk and nuts. Do you have any favourites?

i love this recipe and you can tone down the spices for your LO
Snobby Joes | Post Punk Kitchen | Vegan Baking & Vegan Cooking

I also love carmelizing a diced onion, then stirring in 1 cup of brown rice and 1 cup of cooked brown lentils, so delicious and simple with just a little salt and maybe butter or butter alternative (we use Earth Balance).

My kids love lentil bolognaise.

Its essentially exactly the same as spaghetti bolognaise, only I put in lots and lots of lentils instead of mince (and when I have it, sometimes I add some diced eggplant too, it adds a different kind of spin to the flavour)

Interesting! Ill try it! Ive been using Earth Balance as well and really like it. I also tried the cheese you suggested. I didnt mind the cheddar melted, but just sprinkled on a wrap, I couldnt do. lol The Mozz is still sitting in my fridge waiting to make an appearance. I may try some mini pizzas with it.

We love lentil and rice salad. I cook brown rice and cool it. I boil lentils in water and once the water boils, turn it off and let them sit for 30 minutes, then drain and cool. I mix those two together with olive oil, lemon juice, balsamic vinegar, a little dijon mustard, herbs I have around (basil and/or parsley) and any veggies I feel like. It's so good.

I am a huge fan of lentil soup!! Preferably fresh made and not the canned kind. I only recently discovered lentils and I love them! Also, my friend directed me to theppk site and I love her recipes! They are so inventive and just look like they taste fabulous! I can't wait to try some of them out.

i used theppk vanilla cupcakes as DD's bday cake, it was AWESOME! i also made cupcakes for the party with that recipe as well. big success.
