wraps-- hummus and veggie, falafel, chickpea "tuna salad
stirfries-- throw everything in a big pan with a little sauce and cook fast
sushi-- easy to make homemade
casseroles-- i make something big on my day off of work and eat thru the week-- enchiladas, polenta lasagna, tofu stuffed shells, etc.
