last night i made a yellow summer squash gratin and we had corn and arugula and greens salad with petit carrots and spring onions..a few of our CSA items were used.
no idea what's going on the rest of the week but we pick up our csa for the week tomorrow and i think we're getting tomatoes for the first time this week.
i want to know more about this sweet potato, quinoa chili you speak of!

last night, i stuffed yellow tomatoes and zucchini with a curry pilaf with lots of veggies. i used the insides of the tomatoes to make a sauce to put them in when i roasted them. they were pretty good!

But after Sunday, I'm gonna have to be way more careful as to what I eat. GD sucks! I have to cut out carbs and watch for sugar on top of trying to find vegan meals that everyone here will enjoy. Help! My DS is picky and DH usually wants tons of sweets around.

have you consulted with a nutritionist or RD who is familiar with vegan diets?
the quinoa chili was REALLY good!
The fat free vegan polenta lasagna is good, it is corn meal, so some carbs, but not too terrible. check her blog for low carb recipes, including furman's diet (eat for life?) which should be labeled on the blog.

This week we've had:
Monday: Spaghetti with pesto and sundried tomatoes
Tuesday: Pumpkin soup
Wednesday: Cauliflower and chickpea curry with rice
Thursday: Baked eggplants stuffed with lentils and napoli sauce with salad
Friday: Home made pizzas
Saturday: Falafels
Tonight: Mushroom risotto
