DH soaked some black beans and never did anything with them, so i went to make soup with them yesterday. Guess what? he soaked black SOY beans, LOL, so the soup tasted ok, just an odd texture. Also made a kidney bean and barley dish in the crockpot yesterday and DD really liked it.

eh..it's been a weird food week. on sunday we had sweet potato fries with "chickn" quorn patty sandwiches. totally lazy meal. last night i made a carrot/cucumber/tomato salad and some pasta with lots of zucchini and mushrooms. i still have zucchini and summer squash coming out of my ears from the CSA.
no idea what we're eating today, but we pick up our share this afternoon.

Monday: Veggie meat wraps with crudites
Tuesday: Mushroom soup, chick'n nuggets and corn
Wednesday: Pasta & tomato sauce... probably add some sort of veggie on there
Thursday: White-bean tarragon soup with whole wheat bread
Friday: Steamed veggies & quinoa
Saturday: Sushi nite!

i am so not organized like that!

Easy Tofu Rice Bowl | Family Kitchen

that is what i made tonight, added some garlic powder and a little more soy sauce and PB, but it was super easy and fast and delicious. I made the rice in the pressure cooker so the whole meal was done in about 25 minutes!

I have to be this organized. We dont have a car and I would have to take the bus every time we need to go grocery shopping. So it is done only once a week and there needs to be a specific plan made before hand so I know what I need to buy. So I get lunch and dinners thought of, write down a grocery list and then go buy or order online through IGA.
