Ok, I have bought a huge thing of molasses to try to get more iron in DD's diet. We have not had her iron tested, but she has been a bit more picky, but last night did eat a bowl of black bean soup. I tried some gingerbread molasses muffins from PPK yesterday and they were NASTY (first bad recipe from her in a long time!) and tossed them in the trash. Going to try some bran muffins today. Any other ideas of what to do with molasses? 1 tbs has 15% of daily iron! Though that amount varied by brand i looked at in the store.

i'm not help, but i'm looking for good recipes too. i bought a huge jar of it to get more iron in carlos's diet. (he was low at 9 months, but i thought that was a stupid time to test him anyway). since then i'm obsessed with the iron content of foods for him.
i still would like a good molasses cookie recipe.

we never tested because she was breastfed and then i kinda forgot about getting her tested now.

i ended up making swedish pepparkakor cookies yesterday. i cut them out in halloween shapes. super cute. carlos seems to like them. i made them thicker than i did last year at xmas because they were very crispy like (i guess) they're supposed to be traditionally. but now that they're thicker, they're softer and he's not having a hard time eating them. the recipe i used calls for 1/2 cup of molasses. i bought a mild flavor molasses and i think next time i'd use a bolder flavor one for these cookies.

it's actually from my pie in the sky book. (high altitude baking)
she does list the recipe for sea level, 3kfeet, 5kfeet, 7kfeet (the one i use), and 10kfeet, so if you want it, i can scan it for you.


also, i hope the storm doesn't impact you guys too harshly. i remember when i lived in maryland and a hurricane hit us and we didn't have power for 5 days and were cooking in the fireplace. stay safe!

I use molasses in baked beans, and lots of muffins. I also use a bit of it instead of brown sugar in things like pancakes if I want that flavor but don't want sugar in them.
