I have little inspiration after Thanksgiving week! LOL. I never made the lentil shepard's pie, so maybe that? DD wants pizza, so will try to throw some dough together today for tonight. We are out of daiya, so pick some up later. I got the newest Happy Herbivore cookbook, so maybe something from there? anyone else get it? I made her tempeh hamburger helper from one of her other books this weekend. it was good and easy.

I made the lentil shepards pie from fat free vegan tonight and ww pizza dough for DD's first school lunch at her new school! she started today but did not stay for lunch. Her previous school fed them.

i like that planner...it got me thinking how there are no good veggie sausages anymore.
at least none that i find delicious or anything. tofurky just doesn't get that stuff right in my opinion and field roast isn't really sausage like. boca used to make these awesome sausage i could make sausage and peppers with and then stopped making them. i was so bummed!

last night we did a tri colored penne with green beans and peppers with a raw kale salad with yellow tomatoes. it seemed like such a summer meal.

we ate leftovers for 4 nights since we made enough food to not have to cook.

no idea what's for dinner tonight but it's our last CSA share..it's ending two weeks early since summer was so warm in colorado...we're going to have the option to choose from excess veggies and fruits (we dont pay for fruits) this week to make up for the missing two weeks. i have no idea how much extra i'll take because i'm pretty sick of kohlrabi!!! i'll totally jump on some rocky mountain apples tho!
