Not much enthusiasm to cook this week. Not sure why. I had a recipe fail over the weekend which sucked. It was a cauliflower tofu fritatta. It was nasty, dry, flavorless, etc. Went right in the trash I made some chickpea salad for lunch and will make some cabbage pad thai too, basically pad thai but shredded cabbage instead of noodles. Hot and sour soup again too. Nothing too exciting. Was thinking maybe a crockpot recipe today.

yesterday i made some sweet potato and black bean enchiladas with a green chili sauce, some rice and we did a massaged kale salad with mango and avocado...i also made a huge dish of chocolate bread pudding.
no ida what we're eating today! story of my life!

I have no clue what to cook tonight...

But just for ideas for you guys, last week I did lasagne...made the 'ricotta' out of tofu..blended with onion and peppers,garlic, basil, olive oil and a little sugar and seasoning to make a the cheese.... marinara with diced tomatoes nicely seasoned and instaed of meat layers I did mushroom layers

I had left over 'cheese' so another night I used that and made stuffed shells.... yummers on both accounts....

May be I'll do a Shepard's pie tonight or this week....using lentils for the meat

welp, I decided to stuff yellow peppers (quinoa, mushrooms, carrots, celery, onion), with a cucumber and onion salad (olive oil, apple cider vinegar and sugar), and potato salad

yesterday I found this recipe for pumpkin stuffed shells...imagine creamy nice pumpkin stuffed into the shells and then a creamy alfredo type sauceover them!! Gotta do it soon! I LOVE pumpkin
