I made this cauliflower hummus for lunch, YUMMO! and i omitted the oil and it was still delicious. Put it on some toasted ezekiel bread.

Otherwise, i dunno. Maybe try cashew mac n cheese for DD. I made another round of cashew "goat" cheeze today.

darn. i have everything but the tahini. this sounds good.

last night i took some multigrain pizza dough i bought at whole foods and then made a white cannelinni bean hummus....i put that on the dough with satueed veggies and sun dried tomato pesto. sounds weird but it was pretty good. we ate it with a huge mixed greens salad.
i have like a billion carrots i need to do something with. any ideas?

carrots? i like carrot chips in the oven.

i am attempting to make pita bread AND burger buns today! both doughs are resting.

Chickpea Veggie Burgers

i used this recipe to make my own variation last night. i wanted a chickpea nugget that was more nutritious. i used mushrooms, scallions, yellow onion, zucchini and carrot along with the chickpeas and quinoa flakes as a base.
i know a lot of you guys dont eat eggs tho so i dont know what your binder would be. maybe this should be vegan mommies instead of vegetarian mommies
anyway, i used my own seasonings also. they were really moist and good. carlos ate them up compared to the nuggets i made a few weeks back. these were a hit.

don't want to exclude anyone with vegan, cause we are not totally strict 100% of the time For binders, you can use lots of things. Flax, oatmeal, flour, etc.

made this for dinner tonight, it was AWESOME! and all stuff i had in my pantry/fridge. I used just a mild curry.
