carrot cake?

i found a super cute cake pop recipe (egg shaped, you actually roll the cake into egg shape, you mix it with something, i forget what)...it calls for carrot cake since they're for easter, but it asked for a boxed carrot cake mix, i dont really want to do that...i have an amazing carrot cake recipe but it calls for pineapple and since there are a couple of people with a pineapple allergy (makes their tongue and throat itch, weird) in my family, carlos cant have pineapple until the dr gives the go ahead after his 2 year wellness appt.

anyone tried any good carrot cake recipes? i would like something moist and preferably vegan since it'll be lower bad fats, et...but i'm open to all recipes.

hmmm. i have not made a carrot cake in ages!

hmm..looks good, i'll have to give it a trial run!

do you happen to know if you can substitute coconut oil for other oils in equal parts in recipes? or is the ratio different?

also those natural dyes are gonna be perfect for the easter egg cake pops!!

the recipe said to use candy melts, but *** is in those things anyway? i'd rather melt some good quality white chocolate and add some color to it.

candy melts are ok, depending on the flavor. They have more fat (oil) than chocolate chips, so they are actually better at melting and dipping.
