What's cooking this week? I made the Happy Herbivore Hippie loaf last night with a couple alterations. It was tonight's dinner too. I am going to make sweet potato quinoa chili tomorrow, one of our favorites and i have not made it in a while. I also made another big batch of chickpea salad for lunch this week. DD wanted a vanilla cake, so we made a vegan vanilla cake with chocolate ganache this morning.
• Spaghetti with parsley, garlic, olive oil and breadcrumbs, Green beans with lemon and thyme (last night's dinner.. mm!)
• Vegan quinoa and sweet potato chili, Skillet cornbread
• Pasta della California
• Brown rice with tofu, dried mushrooms, and baby spinach
• Udon miso noodle soup
• Spicy, crisp tofu on mint-avocado salad
