Any new recipes this week? I made a berry pie for DD last night and used agar agar instead of gelatin. I kinda just winged it and it turned out great. It was a vegan crust with flour, sugar, a little salt, oil and apple sauce. I made sweet potato quinoa chili last night. Not sure of what i am going to be making today.

Now DD started gymnastics on Friday nights (5pm) and does yoga monday afternoons, so i need to have more food on hand and ready to go.

I made tapioca pudding and it was good, just not thick, maybe some tapioca starch or corn starch next time.

I made DD mashed potato patties last night, mashed potatoes mixed with some cashew cheese, peas, spinach, salt and pan fried.

I tried a mozzarella cheeze made from cashews and almonds and it was good, but it tasted like cheddar!

those all sound good, you've been productive!

i made some "chicken" parmesan sandwiches last night. totally mindless cooking but they were good. saturday night was pasta with lots of veggies in a lemon/oil sauce with herbs. i haven't hand time to really devote to dinner, so everything has had to be fast.
i have a menu plan this week, but let's see if i stick to it. i'm SUPPOSED to make the happy herbivore cuban black bean cakes with some spanish rice and i'm going to try a vegan slow cooker 'farm stand' stew...it looks interesting, it has fennel in it...i cant remember the two other things i'm supposed to make.

i made the black bean cake things...they were good, but i would totally add more seasoning next time. i did add some masa harina instead of the cornmeal and it gave it the most awesome mexican flavor.

i really enjoy fennel! especially raw in salads.

I find that for most recipes I am majorly adding seasonings! Sometimes double or tripling! I guess i like more flavor
