i actually meal planned this week. i'm doing a few slow cooker things (that book is proving to be helpful actually) and some happy herbivore things. i haven't been on pinterest much because i've had different family in town for almost three weeks.
ginger miso quinoa stir fry
barley orzotto with beans and veggies
pasta and vegetable frittata
braised veggies with beans and barley
some repeat ingredients in there which will help. grocery bill has been getting super high. i cant wait til summer so we can hit up the organic farmers market stand and save some money for a few months.
the csa we joined last year is having major financial problems and is probably going out of business any second. then the other one we wanted to join which was closer to home is having issues because we're in a draught and they weren't allotted any extra water to fuel the farm...they might have to close down and they've been around since 1906. really sad.
i have a cup of leftover quinoa from yesterday so i will use that instead of rice.
i wonder what the calories are in a flax egg vs a regular egg...hmm..why do some people say 1tbl spoon of flax to 3 of water and some say 2tbl of flax to 3 of water....
ok, it's hours later now and i just used 2 eggs...anyway, they were a total disappointment. i think they need more seasoning for all of that flour and beans and eggs. they tasted like nothing. not even beans or cauliflower. my husband thinks the internet is full of horrible recipes and this didn't help my cause

i wish we had vegetarian/vegan restaurants around here. there are some cities in the state that have some, but i dont get out there.
anyway, i have the vegan vegetable and pasta frittata in the slow cooker...made with tofu as the binder. it smells really, really good. i cant wait to dig in.
The one we went to is about 20 minutes from us. We live about 45-60 minutes outside the city, and of course, the closer you get to the city, the more options, but i really do not care for eating out much (well i like it, but my waist line and wallet do not), so we rarely go anyways.
