Anything exciting this week? I was away all weekend for the Nj Marathon and have zero inspiration.

i was gonna make some black bean/sweet potato enchiladas last night, but we had a late lunch and weren't hungry enough for it. i'll do them this evening.

i might make some edamame burgers i found a recipe for online this week also. but i probably will just serve the as patties since i forgot to buy buns.

i didn't meal plan very well this week so i'm gonna have to wing some nights. i'll probably revisit last week's pesto and see if LO eats it again as well as he did last week.

I may attempt the No Meat Athlete cashew cheeze pizza today if i have enough time to make the dough and soak the cashews.

my food week (especially dinner) has been horrible. my husband has been working insane hours and carlos doesn't give me much time to prepare meals.
hopefully next week will be better.
i'm still nut paranoid, but i gave him a granola bar made with a little almond butter on monday and he seemed fine. i dont know if it was enough to affect him tho.
i love cashews too. they're probably my favorite nut. i have never tried cashew cheese. what's the texture like?

In the vitamix, the cashew cheeze is smooth in texture. I made some last night

If you have no family history of nut allergies, i would try to relax and let him eat them in moderation.

I had a crappy week, my husband was very unexpectedly let go from his job, we are still in shock. We may be eating rice and beans from now on I have a race next weekend, so probably just minimal cooking this week.

ugh, that sucks about your husband's job, i'm sorry. i hope he finds a new job quickly.
rice and beans can be delicious but get old fast...i remember our rice and beans days when i had a crap job and my husband was working and going to school. we also ate a lot of soup and crackers.
