What's cooking this week? I have no idea. I am so tired and lazy after doing my race this weekend. It is gonna take a while to recover Atleast energy wise. Probably brown rice salad for lunch, was thinking about making morrocan stew again, if i can find a butternut squash.

this week is up int he air. i haven't been in the mood to cook for weeks. 80% of the recipes i try from online either dont work or come out tasting like nothing.
i'm tired of pancake and burger recipes not working. i need to find some good cookbooks.

making this oldie but goodie tonight Naughty & Nice Vegan Enchilada Casserole

second try on the strawberry bday cake trial just came out of the oven Vegan Strawberry Cake - My Vegan Cookbook - Vegan Baking Cooking Recipes Tips

Happy herbivore has rarely let me down, same as fat free vegan. Isa's recipes have been more hit or miss, as well as vegan dads. If you go on my pinterest, under recipes i have made (only main dishes), i have comments under a lot of them. We do a lot of stew/curry type meals.
